TEACHER TRAINING FAREWELL

Farewell Party is a current common practice that is mostly associated with organization employees, who are on transfer or retiring (vocabularydictionary.com 2007).It is a time when others have the opportunity to acknowledge your contribution in an organization. It is time to say “thank you” and “Goodbye”.

As a hospitality student we were asked to organize and cater for one of teacher training staff member who was on transfer. The event came to success as most of the customer needs were considered planned menu, set up of the restaurant and location.

RESTAURANT SET UP
According to Cousins,et.al (2002) states that table setting in any restaurant is determined by the style of cuisine its serves, at the event the style of service that was used to serve guests was buffet. They are many types of service like al carte and buffet is generally a self-service form of dining in which the customer pays a fixed price and is entitled to select as much food as he or she wishes. Lillicrap and Cousins(2010).The buffet should be set up in a prominent position in the room, making sure that there is ample space for display and presentation (Lillicrap and Cousins(2010) at the event there was plenty of space for customers circulation and the clearing of used crockery and cutlery were carried out without disturbing the customers

MENU PLANNING,
When planning a menu there are factors needed to be considered (quality, price, food preparation, dietary or nutritional claims and point of origin( Walker and Walker 2014)  but the basic rule of menu planning is to know your customers. Before the event the chef meet with the customers to find out, what they wanted to be serve with during the event. A three course meal was planned
